Dessert Phyllo Cups

Dessert phyllo shells with two fillings – one with raspberry preserves, the other with sweet thyme. So pretty, quick, light, and delicious. Sure to delight both sweet and savory palates! Note: Do not fill phyllo cups in advance as they tend to get soggy!

Raspberry-Chèvre Cups:

1 package Athens Phyllo Shells (15 little cups)
3 ounces chèvre
3 tablespoons creme fraiche*
3 tablespoons raspberry preserves
2 tablespoons confectioners sugar
15 fresh raspberries for garnish
(Alternate garnish: Pomegranate seeds!)

Directions: 

  1. Take phyllo cups out of package and place onto a clean surface for assembly.
  2. Mix the chèvre, creme fraiche, raspberry preserves, and confectioners sugar and beat until smooth.
  3. Spoon the mixture into the phyllo cups.
  4. Place a single raspberry on top of each cup for garnish and serve on a platter.

Sweet Thyme & Chèvre Cups:

1 package Athens Phyllo Shells (15 little cups)
3 ounces chèvre
3 tablespoons creme fraiche*
1½ teaspoon thyme, finely chopped (fresh is best but dried works)
2 tablespoons confectioners sugar
15 fresh raspberries for garnish
15 tiny sprigs of thyme for garnish

Directions:

  1. Take phyllo cups out of package and place onto a clean surface for assembly.
  2. Mix the chèvre, creme fraiche, chopped thyme, and confectioners sugar until smooth.
  3. Spoon mixture into the phyllo cups.
  4. Place a single raspberry & thyme sprig on top of each cup and serve while fresh.

* To make your own creme fraiche, simply mix 1 part sour cream with 2 parts heavy cream!
