Simple, pretty, and surprising! These Swedish gingerbread thins would make a great appetizer at any wedding or baby shower. TIP: The topping can be made in advance but should not be added to the cookies until it's time to serve them, as the cookies will become soggy.
1 package Anna’s Swedish Thins (gingerbread cookies)
2 ounces chèvre
2 tablespoons creme fraiche*
1 teaspoon fresh thyme, minced
Sprigs of thyme for garnish
Alternate garnish: Pomegranate seeds in the center with sprigs of thyme.
- In a small bowl, blend chèvre, creme fraiche, and minced thyme.
- Arrange the gingerbread thins on a serving platter and spoon a dollop of the chèvre mixture onto the center of each cookie.
- Garnish with thyme sprig or pomegranate seeds.
* To make your own creme fraiche, simply mix 1 part sour cream with 2 parts heavy cream!
